PICKLED TURKISH carrot
I wish to use empurpled carrots which are much higher in nutrients than orange carrot , but whatever you have on hand is fine . infant Daucus carota sativa are particularly attractive and make a great appetizer . If you utilize large carrots , they should be halve or quartered so no spear is wider than ½ column inch .

RAW PICKLED common beet
This is an version of a recipe by David Chang of Momofuku . The tenuity of the beets and their crunch make them as addictive as potato chip . Although it ’s possible to slice them with a tongue , they amount out well if you use a mandoline .

SPICY sugared CUCUMBER kettle of fish
This is an adaptation of the family pickles served at Gjelina in Venice , California . I always have a jarful of these sitting in the fridge and usually just top it up from time to time with fresh shredded cucumber , keeping the same brine . These are like spicy bread - and - butter hole and go well with just about everything . Using a mandoline get this an well-heeled recipe .

SIMPLE PEACH JAM
I never process muddle in stewing H2O : I reckon it dilutes both the clean colour and gustatory perception of practiced yellowish pink . Instead , I use a prank I learned from Darina Allen at the Ballymaloe Cookery School : Preheat your jam jars and palpebra in the oven while you prepare your crush . This technique work for all yield jams .
